Soft and quick pineapple cake, perfectly moist, without butter. I’ve been making delicious water cakes for a while, and often replace the water with fruit juice, whether it’s orange, lemon, or else; this time I wanted to try with pineapple juice, you can use regular fruit juice, or if you want to add pineapple slices as I did, the syrup from canned pineapple works perfectly. The pineapple cake with canned pineapple is really delicious, it stays moist, so it’s very pleasant to enjoy on its own, but if you want, you can also fill it with a fruit cream. If you don’t want to use canned pineapple, just the pineapple fruit juice is fine.

Pineapple Cake Ingredients
- 5 eggs
- 2 cups all-purpose flour
- 1 cup sugar
- 2/3 cup pineapple juice
- 1/2 cup sunflower oil
- 1 tbsp baking powder
- 8 slices canned pineapple (1 can)
- 8 candied cherries
- 3 tbsp sugar

Steps to Prepare Pineapple Cake
1. In a clean bowl, work the eggs for a minute with the electric whisks.
2. Add the sugar to the eggs and work for another 5 minutes with the electric whisk.
3. Gradually pour in the oil, continuing to mix with the whisk.
4. Add the sifted flour with the baking powder, and mix with the whisk.
5. Finally, add the pineapple juice and mix again.
6. Butter and flour the edges of a pan with a 9-10 inch diameter. Sprinkle the base with sugar, a generous 3 tablespoons.
7. Arrange the pineapple slices on the sugar, placing a candied cherry in the center of each slice.
8. Pour the mixture into the pan and bake in a preheated oven at 340°F for about 50 minutes. If it becomes too golden, lower the oven to 320°F.
9. After performing the toothpick test, if dry, remove from the oven, and invert onto a serving plate. Let it cool before enjoying.
If there is leftover syrup, you can pour it over the cake in the pan once baked. Page with affiliate links.
