How delicious is stir-fried rice in a pan with shrimp and peas, made even more flavorful with curry — it takes just a few minutes and is a complete, balanced dish, suitable even for those on a diet. I made it the other day after coming back from the gym; after a tough workout to recover energy I prepared a rich plate of rice, completed with buttered peas (a little butter, but it makes them special) and shrimp quickly sautéed in a pan with onion and curry — just a few ingredients to enhance the flavor. I avoided wine and other aromatics to create a simple, tasty dish without too many contrasts. It’s a perfect dish to make often because it’s easy, fast and healthy. If you like, you can replace the peas with zucchini, but I usually make up for it at dinner with a lot of vegetables.

Ingredients for stir-fried rice with shrimp and peas, more flavorful with curry
- 3/4 cup rice (for all recipes)
- 1 1/2 cups peas
- 1/2 lb shelled shrimp
- 1 yellow onion
- 1/2 tsp curry
- 2 tbsp extra virgin olive oil
- 2 tsp butter
- to taste salt
Tools to prepare the stir-fried rice with shrimp and peas with curry
- 1 Pot
- 1 Pan
- 1 Spatula
- 1 Knife
- 1 Cutting board
- 1 Colander
Preparation steps for stir-fried rice with shrimp and peas
Start by putting the water on the heat to cook the rice. As soon as it reaches a boil, immediately add the peas and let them cook for 3 minutes, then remove them with a colander and cook the rice in the same water, adding a little salt.
Meanwhile, chop an onion and put half of it in the pan, letting it gently soften. Add the shelled shrimp and cook quickly. If they are frozen, rinse them briefly under running water to remove excess ice. Add the curry and a little salt and let them brown well — if frozen, about a couple of minutes. Set aside.
In the same pan put the remaining onion with the butter, sweat it a bit and add the peas. Add a pinch of salt, a little water and let them flavor for a few minutes.
Drain the cooked rice, toss it in the pan with the peas and add the shrimp; let it flavor for a minute over high heat. At this point you’re ready to serve — get ready to enjoy a super delicious dish.
