Stir-Fried Rice with Shrimp and Peas, Even Better with Curry

in , ,

How delicious is stir-fried rice in a pan with shrimp and peas, even more flavorful with curry — it takes only a few minutes and is a complete, balanced dish, suitable even for those on a diet. I made it just the other day after returning from the gym: after an intense workout to recover energy I prepared a rich plate of rice, completed with buttered peas (a little, but it makes them special) and shrimp quickly sautéed in a pan with onion and curry, just a few ingredients to highlight the taste. I avoided wine and other aromatics to prepare a simple, tasty dish without too many contrasts. It’s a perfect dish to make often because it’s easy, fast and good for you. If you prefer, you can replace the peas with zucchini, but I usually make up for it at dinner with lots of vegetables.

  • 3/4 cup rice (for all recipes)
  • 1 1/2 cup peas
  • 9 oz shelled shrimp
  • 1 golden onion
  • 1/2 teaspoon curry
  • 2 tbsp extra virgin olive oil
  • 2 tsp butter
  • to taste salt

Tools for preparing the stir-fried rice with shrimp and peas with curry

  • 1 Pot
  • 1 Pan
  • 1 Kitchen spatula
  • 1 Knife
  • 1 Cutting board
  • 1 Strainer

Steps to prepare stir-fried rice with shrimp and peas

  • Start by putting the water on to boil for the rice. As soon as it reaches a boil, immediately cook the peas; let them cook for 3 minutes, then remove them with a strainer and cook the rice in the same water, adding a little salt.

  • Meanwhile, finely chop an onion, put half of it in a pan and let it gently sweat; add the shelled shrimp and cook quickly. If they are frozen, rinse them briefly under running water to remove excess ice. Add curry and a little salt and let them brown well — if frozen, cook for a couple of minutes. Set aside.

  • In the same pan, add the remaining onion with the butter, sweat it a bit and add the peas; add a pinch of salt and a little water, and let the flavors meld for a few minutes.

  • Drain the cooked rice, toss it in the pan with the peas and add the shrimp; let it season for one minute over high heat. At this point you are ready to serve — get ready to enjoy a super delicious dish.
