Super soft orange cake with orange juice, just the right moisture, which makes it truly special, great to eat even on its own, melting on the palate, and it’s butter-free, with a very quick preparation, in fact, all you need is a bowl and a couple of electric beaters to prepare it. Few and simple ingredients to prepare a fantastic orange cake, eggs, flour, sugar, baking powder, a little sunflower oil, and orange juice. I used oranges from my garden for the recipe, I always make some when I have them from my tree because they have a truly fabulous taste, and they can offer me fantastic sweets. You will surely remember my orange chiffon cake, and by the way, I’ll reveal a secret, the ingredients of this cake are the same, but there is no cream of tartar, which is needed for the chiffon cake, but I completely changed the preparation method to make this cake even simpler to prepare. Obviously, the result is a bit different from the chiffon cake, but I assure you it won’t make you envy it at all, indeed, maybe since this is more practical to prepare, it’s probably the one I’d make more willingly. If we talk about orange cakes, I can’t help but mention the pan d’arancio, a typical Sicilian sweet, prepared in the blender, with blended oranges, also very good, but be careful, you need the right oranges, otherwise, it becomes too bitter if you use the whole peel. So now after much chatting, I leave you to the recipe, which I finally decided to prepare when yesterday I went to pick all the oranges from my garden because I discovered I have a mysterious little animal, at the moment, that night after night comes to eat my oranges, hollowing out the pulp from a little hole, and leaving these delightful decorations on the branches, like Christmas balls, made of only orange peel, and luckily I noticed before it ate them all, but I must admit it was already making good progress, probably it organized parties with its little friends.

Ingredients for Orange Cake
- 1 2/3 cups all-purpose flour
- 1 cup sugar
- 4 eggs
- 1/3 cup sunflower seed oil
- 1/2 cup orange juice
- 1 tbsp baking powder
- butter and flour for the 9-inch pan
- to taste powdered sugar

Steps to Prepare Orange Cake
First, prepare the pan, greased and floured, 9-inch pan.
In a bowl, break 4 eggs, work them for a minute with the electric beaters.
Add the sugar to the eggs and work for 6-7 minutes to obtain a fluffy and foamy mixture. The more you work it, the better.
At this point, you can turn on the oven to 350°F static.
Now add the oil in a thin stream to the mixture, continuing to mix with the electric beaters.
Now add the sifted flour and baking powder, and still mix slowly with the beaters.
Finally, add the orange juice, and work again with the beaters to obtain a fluffy and creamy mixture. If you want, you can also add a bit of grated orange zest.
Now pour the mixture into a 9-inch greased and floured pan.
Bake in a hot oven at 350°F for about 50 minutes, but lower the temperature to 340°F when it starts to brown on the surface, about after 20 minutes. Remove from the oven, take out of the pan, and let cool before enjoying sprinkled with plenty of powdered sugar.

The orange cake keeps outside the fridge, under a cloche for 3-4 days, soft as freshly made, and day by day even more delicious.
This cake can be used as a base to fill, I recommend a maximum of 2 layers because it is very delicate, move the top layer with a tray to avoid breaking it. Here are some sweet creams to fill it, or maybe just covered with a chocolate glaze.
