Steps to Prepare Veal Strips with Potatoes and Artichokes

  • We start by preparing the artichokes. We clean them by removing all the hard outer parts, leaving the terminal part of the stem and peeling it. We also remove the hard tips. Then cut into wedges and remove the inner fuzz. Immediately place in water and lemon juice to prevent browning.

  • Peel the potatoes and cut them into not too small chunks, wash, and proceed to cooking.

  • In a pan, heat a little oil with 1 garlic clove and a whole chili pepper. Heat and add the potatoes with the artichokes. Add salt and half a glass of water, or alternatively wine, and cook over low heat with a lid. It will take about 20-30 minutes to cook the potatoes with artichokes.
