The Abruzzese cantucci (also known as tozzetti) are almond cookies, similar to the famous cantucci from Prato. Abruzzese cantucci are crispy and tasty cookies baked in the oven with an elongated shape, made with simple ingredients. You can prepare these almond cantucci in advance and serve them on any occasion, pairing them with Vin Santo, enjoying them at breakfast with coffee or milk, or using them for tiramisu.

Ingredients
- 2 cups Flour
- 2 Eggs
- 3/4 cup Sugar
- 1/4 cup Soft butter
- 3/4 cup Blanched almonds
- 1 teaspoon Baking powder
Preparation
To make the Abruzzese cantucci, roughly chop the almonds and mix them in a bowl with the eggs, along with all the other ingredients.
Transfer the dough onto a floured surface and work it until you get a soft and homogeneous dough. Divide the dough into four parts and form them into logs.
Place the logs on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F for 25 minutes.
Once they start to brown, remove them from the oven and cut them into oblique slices about 1/2 to 3/4 inch thick (cantucci).
Place them back in the oven at 250°F for 10 minutes to make them biscotti, until golden brown. Then remove and let them cool.
