The anchovy and potato croquettes are crispy and delicious bites, ideal as a main dish and easy to make. I first cooked the anchovies in a pan with parsley and lemon, then made the croquettes with boiled potatoes. You can cook these croquettes in a hot air fryer or fry them in boiling oil: the result will still be satisfying, and your guests will ask for more.

Ingredients
- 7 oz anchovies
- 1 bunch parsley
- lemon juice
- 1 egg
- 1.75 oz breadcrumbs
- 3.5 oz boiled potatoes
- to taste extra virgin olive oil
- to taste salt
- 2 eggs
- to taste flour
- to taste breadcrumbs
Preparation
To make the anchovy and potato croquettes, clean the anchovies by removing the head and innards, then open them in half and remove the spine. Rinse the fish under running water and let them drain well.
In a pan, pour a drizzle of extra virgin olive oil and the chopped parsley. Add the anchovies and cook over low heat
Pour the lemon juice and continue cooking over low heat. Salt at the end of cooking.
When the anchovies are cooked, pour everything into the mixer and blend until you get a smooth and soft mixture.
Then pour the anchovy mixture into a bowl and add the boiled potatoes (previously mashed).
Incorporate the egg and breadcrumbs and mix the ingredients until you get a compact yet soft mixture. Adjust salt
With your hands, take a bit of the mixture and form the croquettes, slightly flattening them.
Proceed with the breading: pass the croquettes in flour, then in beaten egg and finally in breadcrumbs.
Fry the croquettes in abundant boiling oil until they are well golden. Drain them and place them on absorbent paper.
For those with a hot air fryer. Lightly grease the basket of the hot air fryer and place the croquettes inside.
Pour a drizzle of extra virgin olive oil on the surface of the croquettes and cook them in the hot air fryer at 392°F for 10-12 minutes, or until golden.
