The artichokes and peas with bacon are a rich side dish, ideal to serve even as a main course. A genuine and very versatile dish that can be used as a topping for pasta, and can be personalized by adding different ingredients.
The recipe I propose today is the same my grandmother always prepared, who added some diced pancetta (or bacon) to make the dish tastier, enhancing the flavor and freshness of the artichokes and peas. Occasionally, she also used to add a beaten egg at the end of cooking, offering a more substantial and appetizing dish.
These artichokes and peas with bacon are a triumph of taste and a tribute to the month of May.

Ingredients
- 3 Artichokes
- 3.5 oz peas
- 1.75 oz Bacon
- 1 onion
- to taste Extra virgin olive oil
- to taste Salt
Preparation
To prepare the artichokes and peas with bacon, chop the onion and let it soften in a pan with a drizzle of extra virgin olive oil. Cut the bacon into cubes, add it to the onion and let it brown for a couple of minutes.
Wash and clean the artichokes: remove the stem, cut the tips (about 0.8 inches), and eliminate the outer, tougher leaves. Then cut them into wedges and add them to the onion, salt, and allow to stew.
Also pour in the peas (previously washed), add hot water to almost completely cover the mixture and cook on low heat until fully cooked. Serve and enjoy your meal!
Note: To make the dish richer and more flavorful, once the artichokes and peas with bacon are ready, a beaten egg can be added directly to the pot, stirred and mixed well to combine the ingredients.
