The baked pumpkin with feta is a rich and spicy side dish, also ideal as a pasta topping or to fill a flatbread. I seasoned the pumpkin with curry and rosemary and cooked it in the oven. During the last 5 minutes, I added the feta and some flaxseeds. This recipe will surprise you with its ease of preparation and irresistible taste!

Ingredients
- 9 oz pumpkin
- 5 oz feta
- 1 tablespoon curry
- 1 tablespoon dried rosemary
- to taste flaxseeds
- to taste extra virgin olive oil
Steps
To make the baked pumpkin with feta, wash and clean the pumpkin, remove the skin, and clean it by removing the seeds and strings.
Cut the pumpkin flesh into cubes and place it in a bowl. Season with a drizzle of extra virgin olive oil, rosemary, and curry. Mix by stirring with a spoon.
Place the pumpkin on a baking sheet lined with parchment paper and bake at 356°F for 15 minutes.
Cut the feta into cubes, add it to the pumpkin mixing with a spoon, sprinkle some flaxseeds, and put back in the oven for 5 minutes.
Serve and enjoy your meal!
