Baked salmon au gratin with pistachios is a second course with an irresistible taste and easy to make. For this recipe, I used fresh salmon fillets that I marinated for about half an hour with an emulsion of oil, lemon, and chives. I then created a breading with bread, pistachios, oregano, and curry. I baked it, and the result was more than satisfying: finger-licking good!

Ingredients
- 7.75 oz salmon fillets
- 1 tsp dried chives
- lemon juice
- 0.7 oz panko (or breadcrumbs)
- 0.7 oz crushed pistachios
- 1 sprig dried oregano
- 1 tsp curry (optional)
- to taste extra virgin olive oil
- to taste salt
Preparation
To prepare baked salmon au gratin, cut the salmon into fillets, check with your hands for bones and remove them using tweezers.
Marinate the salmon for about 30 minutes with an emulsion of extra virgin olive oil, juice of half a lemon, and chives.
In a bowl, combine the panko with the crushed pistachios, oregano, and curry.
Line a baking tray with parchment paper, place the salmon fillets on it, salt them, and cover them with the breading, pressing it down well with your hands.
Drizzle with a little extra virgin olive oil and bake in a preheated oven at 392°F for 15/20 minutes, until the salmon is fully cooked and golden.
Once cooked, remove from the oven and serve the salmon hot. Enjoy your meal!
