Oven-Baked Salmon au Gratin with Pistachios

The oven-baked salmon au gratin with pistachios is a second course with an irresistible taste and easy to make. To prepare this recipe, I used fresh salmon fillets that I marinated for half an hour with an emulsion of oil, lemon, and chives. Then I created a crust with bread, pistachios, oregano, and curry. I baked it in the oven and the result was more than satisfying: finger-licking good!

Baked salmon au gratin with pistachios

Ingredients

  • 8 oz salmon fillets
  • 1 tsp dried chives
  • lemon juice
  • 1/4 cup panko (or breadcrumbs)
  • 1/4 cup crushed pistachios
  • 1 sprig dried oregano
  • 1 tsp curry (optional)
  • to taste extra virgin olive oil
  • to taste salt

Preparation

  • To make the salmon au gratin, cut the salmon into fillets, check for bones with your hands, and remove them with the help of tweezers.

  • Marinate the salmon for about 30 minutes with an emulsion of extra virgin olive oil, the juice of half a lemon, and chives.

  • In a bowl, combine the panko with the crushed pistachios, oregano, and curry.

  • Line a baking tray with parchment paper, place the salmon fillets, salt them, and cover them with the crust, making sure it adheres well with your hands.

  • Drizzle with a little extra virgin olive oil and bake in a preheated oven at 392°F for 15-20 minutes, until the salmon is fully cooked and golden.

  • Once cooked, remove from the oven and serve the salmon hot. Enjoy your meal!
