Baked Salmon with Vegetables, Pine Nuts, and Raisins

Baked salmon with vegetables, pine nuts, and raisins is a rich and flavorful main course that can also be served as a one-dish meal.

Every time I travel, I return home with cultural and culinary enrichment. This is what happened last weekend when, returning from Austria, we stopped for dinner and I enjoyed a slice of baked salmon with cherry tomatoes, broccoli, and olives.

Once back home, I wanted to recreate it and let my boyfriend (who wasn’t traveling with me this time) taste it. The result was extraordinary!

I used zucchini, cherry tomatoes, broccoli, bell pepper, and mushrooms as vegetables. Then I added green olives and Taggiasca olives; I also added pine nuts and raisins, and believe me when I say it adds an even better flavor to the dish! I used the salmon cut into slices and garnished it with flax seeds, then baked it to get a delicious dish: wasn’t that clear? You can customize this recipe using the vegetables you like best and serve it to friends and relatives!

Baked Salmon with Vegetables, Pine Nuts, and Raisins

Ingredients

  • 7.8 oz Salmon fillets
  • to taste Flax seeds
  • 10 Cherry tomatoes
  • 1 Zucchini
  • 1 Red bell pepper
  • 2 Button mushrooms
  • 1 cup Broccoli florets
  • 6 Pitted green olives
  • 1 tbsp Taggiasca olives
  • 1 tbsp Pine nuts
  • 1 tbsp Raisins
  • 1 sprig Oregano
  • 1 sprig Thyme
  • 1 clove Garlic
  • to taste Extra virgin olive oil
  • to taste Salt

Preparation

  • To make the baked salmon, wash and clean the broccoli, then cook them in plenty of boiling water and once ready, let them drain.

  • Wash and clean the zucchini, bell pepper, and cherry tomatoes. Cut the zucchini into small cubes. Remove the stem and seeds from the bell pepper and slice it. Quarter the cherry tomatoes. Clean the mushrooms and slice them.

  • Cut the salmon into fillets, check for bones with your hands and remove them with the help of tweezers. Place flax seeds on each salmon fillet.

  • Line a baking tray with parchment paper, place the salmon fillets, and add the zucchini, cherry tomatoes, mushrooms, and bell pepper. Drizzle with a little extra virgin olive oil and put in a preheated oven at 350°F for 15-20 minutes.

  • Then remove the tray from the oven and add the green olives sliced into rings, Taggiasca olives, pine nuts, broccoli, and raisins.

  • Drizzle with a little more extra virgin olive oil, add the minced garlic, oregano, and thyme. Salt and use a spoon to mix the vegetables well so that they are evenly seasoned.

  • Put the tray back in the oven and continue cooking at 350°F for another 10 minutes, or until the salmon is fully cooked.

  • Once cooked, remove from the oven and serve the salmon hot with vegetables. Enjoy your meal!
