Ingredients
- 12 oz shrimp
- lemon juice
- 0.7 oz panko (or breadcrumbs)
- 0.7 oz chopped pistachios
- 1 sprig dried oregano
- 1 tsp curry
- to taste extra virgin olive oil
- to taste salt
Preparation
To make baked shrimp with pistachios, rinse the shrimp under running water, remove the shell while leaving the head and tail. Then remove the intestine: make a cut along the back of the shrimp with a knife and pull it out gently, trying not to break it. Place them in a colander to dry slightly.
Marinate the shrimp with a mixture of extra virgin olive oil and the juice of half a lemon.
In a bowl, combine the panko with the chopped pistachios, oregano, and curry. Mix with a spoon.
Salt the shrimp and coat them with the breading, ensuring it adheres on both sides.
Line a baking sheet with parchment paper and place the shrimp on it. Drizzle with a little extra virgin olive oil and bake in a preheated oven at 392°F for 15–20 minutes, until fully cooked and golden brown.
Once cooked, remove from the oven and serve the shrimp. Enjoy your meal!
