Baked Shrimp with Pistachios

Baked Shrimp with Pistachios is a second course with a refined taste. For this recipe, I used fresh shrimp that I breaded with a coating of bread, pistachios, oregano, and curry. Easy to make, these shrimp will be appreciated by everyone: finger-licking good!

Baked Shrimp with Pistachios

Ingredients

  • 12.35 oz shrimp
  • lemon juice
  • 2/3 cup panko (or breadcrumbs)
  • 1/4 cup chopped pistachios
  • 1 sprig dried oregano
  • 1 tsp curry
  • to taste extra virgin olive oil
  • to taste salt

Preparation

  • To prepare the baked shrimp with pistachios, wash the shrimp under running water, remove the shell, leaving the head and tail. Then remove the internal intestine: cut the back of the shrimp with a knife and gently pull it out, trying not to break it. Place them in a colander to dry slightly.

  • Then marinate the shrimp with an emulsion of extra virgin olive oil and the juice of half a lemon.

  • In a bowl, combine the panko with the chopped pistachios, oregano, and curry. Mix with a spoon.

  • Salt the shrimp and bread them with the coating, making it adhere on both sides.

  • Line a baking tray with parchment paper and lay the shrimp on it. Drizzle with a little extra virgin olive oil and bake in a preheated oven at 392°F for 15/20 minutes, until fully cooked and golden.

  • Once cooked, remove from the oven and serve the shrimp. Enjoy your meal!
