The brioche ring is a delicious and rich baked treat, filled with turkey and avocado. To make it tastier and crunchier, I added some toasted bacon to the filling, and for a cheesy pull, I included cheddar cheese. The result was a soft brioche with an irresistible filling that will be devoured in minutes!

Ingredients
- 3 3/4 cups all-purpose flour
- 3 1/2 tsp fresh yeast
- 1 cup milk
- 1 egg yolk
- 2 tbsps extra virgin olive oil
- 1 1/2 tsp salt
- 7 oz turkey
- 3 slices bacon
- 1 avocado
- 2 oz cheddar
- 1 egg yolk
- 2 tbsps milk

Steps
To make the brioche ring, dissolve the yeast in warm milk in a small bowl, then add the mixture to the flour, also add the extra virgin olive oil and the egg yolk.
Mix the ingredients and finally add the salt: knead well, form a ball and let it rest in a bowl, well covered, for three hours.
Cook the turkey on a griddle (or grill), once cooked and cooled, cut it into strips. In a pan, toast the slices of bacon without olive oil until they become crispy, then cut them into cubes.
Wash and clean the avocado, remove the skin and cut it into cubes. Cut the cheddar cheese into strips. In a bowl, mix the turkey with the bacon, avocado, and cheese. Cover with cling film and let rest.
After the first rise time, take the dough, place it on a work surface and roll it out until you get a round shape of the same diameter as the mold.
Divide the dough into 8 triangles (photo 1). Grease a round bundt pan (mold Ø9.5 inches) and distribute the triangles with their bases overlapping one another (hole 2). Distribute the filling (photo 3) and close each triangle on itself, sealing the ends well (photo 4).
Brush the surface of the brioche with an egg yolk beaten with milk and let it rest for about an hour.
Bake in a preheated oven at 356°F for about 20 minutes until golden brown.
With the unused egg whites, you can make delicious meringues.
