The broccoli flatbread is a vegetarian and gluten-free recipe, perfect to enjoy as a main dish or for a home aperitif with friends. Making this flatbread is easy and quick: you just need to prepare a mixture with boiled broccoli, water, parmesan, and rice flour; then the mixture is poured into a baking pan and seasoned with olive oil and corn flour. Once baked in the oven, you will get a flatbread with an irresistible taste!

- 10.5 oz broccoli florets
- 1 cup rice flour
- 4.5 oz water
- 1 tbsp grated parmesan cheese
- as needed corn flour
- as needed salt
- as needed extra virgin olive oil

Steps
To make the broccoli flatbread, wash and trim the broccoli, cut it with a knife, separating the florets from the stem.
Cook the broccoli florets in plenty of boiling water. Once ready, drain them and let them cool slightly.
Place the broccoli in a bowl, add the rice flour, a drizzle of extra virgin olive oil, a sprinkle of grated parmesan cheese, salt, and gradually pour in the water. Mix until a homogeneous mixture is obtained.
Line a baking sheet with parchment paper and grease it. Sprinkle the base with corn flour and pour the mixture.
With the help of a spoon, spread the mixture on the baking sheet, leveling well. Dust the surface with more corn flour, parmesan, and drizzle with extra virgin olive oil.
Bake in a preheated oven at 392°F for 20-25 minutes, until golden brown.
Once ready, let it cool slightly and then cut it. Serve and enjoy your meal!
