The cabbage cutlets are crispy and tasty vegetarian cutlets made with just three ingredients. I made this recipe using cabbage leaves coated in eggs and breadcrumbs. You can cook the breaded cabbage in the air fryer or oven, or fry them in hot oil. Simple to prepare and irresistibly tasty, these cabbage cutlets will become one of your favorite recipes!

Ingredients
- 20 leaves cabbage (or savoy cabbage)
- 2 eggs
- 100 g breadcrumbs (gluten-free for celiacs)
- to taste salt
- to taste extra virgin olive oil

Steps
To make the cabbage cutlets, cut the leaves from the cabbage removing the hard part of the stalk. Wash the cabbage leaves and dry them well.
In a bowl, beat the eggs with a pinch of salt, and in another bowl, pour the breadcrumbs.
Overlap two cabbage leaves and then dip them first in the beaten eggs and then in the breadcrumbs.
Line the basket of the air fryer with parchment paper and grease it slightly. Place the cabbage leaves and cook at 392°F for 10 minutes, or until golden brown, turning them halfway through cooking.
For those who do not have an air fryer, fry the cabbage cutlets in hot oil until golden brown. Alternatively, bake them in a preheated oven at 392°F for about 20 minutes, turning them halfway through cooking.
