Carrot and Parmesan Wafers

The Carrot and Parmesan Wafers are tasty chips made with just two ingredients. I made a mixture of Parmesan and carrots (lightly blanched); then I formed discs and baked them. Fragrant and crunchy, these wafers are perfect for enjoying during an aperitif or to enrich your dishes!

Carrot and Parmesan Wafers
  • Difficulty: Very easy

Ingredients

  • 3/4 cup carrots
  • 1/2 cup grated Parmesan
  • to taste extra virgin olive oil

  • Round Cutter

Steps

  • To make the carrot and Parmesan wafers, peel the carrots and cut them into large pieces.

  • Blanch the carrots for 5 minutes, then drain and place them in a bowl.

  • Mash the carrots with a fork, or blend them, and incorporate the grated Parmesan.

  • Line the baking tray with parchment paper and lightly grease it.

  • Using a cookie cutter (2.5 inches), create discs with the carrot and Parmesan mixture. Place the cookie cutter on the parchment paper, pour the mixture inside and spread it evenly with the back of a spoon, applying slight pressure.

  • Bake the Parmesan discs in a preheated convection oven at 350°F for 10 minutes, or until golden.

  • Once baked, remove them from the oven and let them cool completely. The carrot and Parmesan wafers are ready to be used. Enjoy!
