Cheese stuffed peppers wrapped in bacon are ideal as a main course or for a barbecue with friends. To make them, I used friggitelli peppers, cut them in half and stuffed them with a mixture of: cream cheese, provolone, garlic, and chives; then wrapped them in bacon and grilled them. With a rich and irresistible taste, these peppers can be served with sauces and they will disappear in an instant.

Ingredients
- 4 Friggitelli
- 8 slices Bacon
- 3.5 oz Cream cheese
- 5 slices Provolone
- to taste Garlic
- to taste Chives
- to taste Barbecue sauce
Preparation
To make the stuffed peppers, wash and clean the friggitelli, remove the top, and cut them in half lengthwise. Remove the stem and seeds.
In a bowl, place the cream cheese and the provolone slices cut into cubes. Mix with a spoon until you get a creamy mixture. Add minced garlic and chopped chives (as desired).
Fill the friggitelli with the cheese mixture. Wrap each pepper half with a slice of bacon. I recommend securing the bacon with a toothpick, as they might open during cooking and the filling could spill out.
Brush the bacon with barbecue sauce and cook the friggitelli on a very hot griddle or grill; cook on both sides until the bacon is crispy and the cheese is melted. Serve and enjoy!
