Ingredients
- 2 tortilla
- 0.55 lb chicken breast
- 0.55 cup cooked black beans
- 0.33 cup peanut butter
- 1 tablespoon red curry paste
- 1 teaspoon soy sauce
- 1 teaspoon curry powder
- 1 bunch salad
- as needed extra virgin olive oil
- as needed salt
Steps
To make the chicken and peanut sauce burrito, cut the chicken breast into chunks or strips.
In a bowl, place the chicken, add the curry powder, a tablespoon of oil, and a pinch of salt. Mix with a spoon and let marinate for 20 minutes.
In a pan, pour a little oil, the peanut butter, and the red curry paste. Cook over medium-low heat and stir occasionally for 5 minutes.
Add the soy sauce and adjust the consistency with water: it should become a creamy and thick sauce.
In another pan, heat a little oil, then add the chicken pieces and brown them for a couple of minutes. Then lower the heat and cook slowly for about 10 minutes.
When the chicken is cooked, place it in the pan with the sauce and also add the cooked beans. Stir to coat the chicken and beans with the sauce.
Heat the tortillas, fill each tortilla in the center with some salad, then place the chicken and beans on top.
Fold the edges of each tortilla inward, and roll it up with the overlapping part facing down.
Cut in half and serve the burritos immediately. Enjoy!
