Chicken, Pesto, and Roasted Tomato Sandwich

The chicken, pesto, and roasted tomato sandwich is a tasty and wholesome two-layer sandwich. This sandwich consists of three slices of bread toasted and filled with Genoese pesto, roasted tomatoes, grilled chicken, and arugula. Irresistibly delicious, this sandwich is perfect for a fast-food-style dinner or as a meal on the go.

Chicken, Pesto, and Roasted Tomato Sandwich

Ingredients

  • 7 oz chicken breast (sliced)
  • 3 slices sandwich bread
  • 2 tbsps Genoese pesto
  • 1 bunch arugula
  • 5 roasted tomatoes

  • Non-stick Griddle

Steps

  • To make the chicken, pesto, and roasted tomato sandwich, first prepare the roasted tomatoes.

  • Grill the chicken breast slices on the hot griddle; once they are cooked and well-browned, remove them from the griddle and cut into strips.

  • Toast the slices of sandwich bread on the griddle.

  • Assemble the sandwich starting from the bottom: fill one slice of bread with a tablespoon of pesto and place the roasted tomatoes on top; then add another slice of bread, fill it with pesto, place the chicken and a bunch of arugula, and top with the last slice of bread.
