- 7 oz chicken breast (sliced)
- 3 slices sandwich bread
- 2 tbsps Genoese pesto
- 1 bunch arugula

Steps
To make the chicken, pesto, and roasted tomato sandwich, first prepare the roasted tomatoes.
Grill the chicken breast slices on the hot griddle; once they are cooked and well-browned, remove them from the griddle and cut into strips.
Toast the slices of sandwich bread on the griddle.
Assemble the sandwich starting from the bottom: fill one slice of bread with a tablespoon of pesto and place the roasted tomatoes on top; then add another slice of bread, fill it with pesto, place the chicken and a bunch of arugula, and top with the last slice of bread.
