Chicken Satay with Peanut Sauce

Chicken satay with peanut sauce is a Thai recipe that involves making chicken skewers served with a peanut sauce. Once the skewers are cooked, an irresistible aroma will fill your kitchen, conquering you! The secret ingredient of this recipe is Thai red curry paste, which is used as a flavor enhancer, and you can buy it online, at the supermarket, or in ethnic stores. For an outstanding result, I recommend using natural peanut butter without added sugars or oil, but regular peanut butter will also do. You can serve these skewers with jasmine rice (steamed) or with soft Asian coconut rice.

Ingredients

  • 12.35 oz chicken chunks
  • 3.5 tbsp coconut milk
  • 1 tbsp red curry paste
  • 1 tsp sugar
  • 1 tsp curry powder
  • 1 tsp salt
  • 0.63 cup coconut milk
  • 3.17 oz water
  • 2 tbsp apple cider vinegar
  • 1 tbsp red curry paste
  • 3.17 oz peanut butter
  • 0.88 oz sugar
  • 1 tsp soy sauce
  • 1 tsp salt

Steps

  • To make chicken satay with peanut sauce, in a bowl, pour the chicken, add the coconut milk, red curry paste, curry powder, sugar, and salt.

  • Mix everything and let the chicken marinate for 20 minutes, or overnight.

  • Place the ingredients for the peanut sauce in a pot over medium-low heat. Stir occasionally, for 5 minutes. Adjust the consistency with water: it should be a creamy and thick sauce.

  • Once cooked, cover with a lid to keep the sauce warm while cooking the skewers.

  • Thread 4 or 5 chicken chunks onto each skewer. Heat 2 tablespoons of oil in a non-stick pan over medium-high heat. Cook the skewers for 3 minutes on each side until golden brown.

  • Alternatively, you can cook the skewers on the barbecue or charcoal.

  • Serve the skewers with the peanut sauce. Enjoy!
