Chickpea and Potato Fritters

The chickpea and potato fritters are tasty vegan bites, perfect to enjoy as a main course or as finger food for a home aperitif. I’ve enriched these fritters with peas and curry and cooked them in a pan with oil, but alternatively, you can cook them in an air fryer. Creating this recipe is quick and easy, and I recommend serving the croquettes with yogurt sauce for a burst of flavor!

Chickpea and Potato Fritters
  • Difficulty: Easy

Ingredients

  • 6 oz potatoes (peeled)
  • 1/2 cup peas (cooked, boiled)
  • 3/4 cup cooked chickpeas (boiled)
  • 6 tbsps rice flour
  • to taste garlic powder
  • 1 tsp chopped parsley
  • to taste salt
  • 1 tsp curry
  • oil for cooking

Tools

  • Blender
  • Air Fryer

Steps

  • To make the chickpea and potato fritters, peel and clean the potatoes, boil them in a pot with plenty of salted water.

  • In the mixer bowl, add chickpeas, garlic powder (amount to taste), and parsley. Blend until the mixture turns into a paste.

  • In a bowl, add chickpeas, peas, and coarsely mashed boiled potatoes; season with salt and add the flour. Also, add the curry and mix until obtaining a homogeneous mixture.

  • With your hands, take the mixture, form patties by slightly flattening them.

  • In a pan, heat a drizzle of oil, cook the fritters, turning them gently until golden.

  • Alternatively, place the fritters in the basket of the hot air fryer, pour a little extra virgin olive oil and cook at 356°F for 10 minutes, turning them halfway through cooking, and cook until golden.

  • Serve the chickpea and potato fritters with yogurt sauce. Enjoy!
