Chickpea Patties

The chickpea patties are tasty vegetarian and spicy bites, easy to make at home. Ideal to serve as a main course, these chickpea patties are delicious with a cheesy heart: I placed mozzarella cubes in the center of each patty. You can cook the patties as you see fit: fried, baked, or with the air fryer.

Chickpea Patties

Ingredients

  • 4 cups Cooked Chickpeas
  • 4 tbsps Extra Virgin Olive Oil
  • 5 tbsps Grated Pecorino (or Parmesan)
  • 1 Egg
  • 1 tbsp Curry
  • 1 sprig Parsley
  • as needed Breadcrumbs
  • as needed Onion
  • 3.5 oz Mozzarella

Preparation

  • To make the chickpea patties, pour the chickpeas into the blender bowl. Gradually add the extra virgin olive oil and blend until you get a creamy mixture.

  • Pour the chickpeas into a large bowl. Then add the egg and grated Pecorino. Stir with a spoon to mix the ingredients together.

  • Add, continuing to stir, the curry, chopped onion (as desired) and washed, chopped parsley.

  • If the mixture is sticky, add some breadcrumbs to achieve a soft mixture that can be worked with your hands.

  • Dice the mozzarella. With your hands, take the mixture, flatten it and place 2/3 cubes of mozzarella in the center. Then, using your hands, form the patties into a round shape.

  • Roll the patties in breadcrumbs and place them on a baking sheet lined with parchment paper.

  • Drizzle the patties with a little extra virgin olive oil and bake in a preheated oven at 392°F until golden, about 15/20 minutes. Alternatively, fry them in plenty of hot oil. Or if you have a air fryer, cook them at 392°F for 15 minutes.
