Chickpeas with Peppers

Chickpeas with peppers is a vegetarian dish and a valid alternative to a first course. If you use already cooked chickpeas, this recipe will be made easily and quickly. To further enhance the flavor, I used oregano and curry, thus serving a delicious dish at the table. This combination will surprise you with its mix of flavors!

Chickpeas with Peppers

Ingredients

  • 1.75 cups cooked, boiled chickpeas
  • 1 red pepper
  • 1 green pepper
  • 1.1 oz cherry tomatoes
  • Half onion
  • 1 sprig dried oregano
  • 1 tbsp curry (optional)
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To make the chickpeas with peppers, pour some extra virgin olive oil and chopped onion into a pan. Optionally, you can add some chopped chili pepper.

  • Wash and clean the peppers, removing the stem and seeds, and cut them into strips.

  • Then add the peppers and halved cherry tomatoes to the onion, and cook over high heat for a few minutes.

  • Next, add the chickpeas, oregano, and curry, cover with hot water, and cook over moderate heat. Salt at the end of cooking.

  • Cook until the peppers have softened. Serve at the table with some toasted bread. Enjoy your meal!
