Chocolate Christmas Tree with Dried Fruit

Ingredients

  • 5.3 oz Milk Chocolate
  • 0.5 oz White Chocolate
  • 0.4 cup Fresh Liquid Cream
  • 3.5 oz Hazelnut Cream
  • as needed Caramelized Dried Fruit
  • as needed Colored Balls
  • as needed Colored Stars

Preparation

  • To make the Chocolate Christmas Tree with Dried Fruit, melt the milk chocolate in a double boiler. On a tray lined with parchment paper, place six round molds of different sizes; pour the melted chocolate inside, trying to make discs of the same thickness (you can use a toothpick to help, dipping it in the chocolate).

  • Also melt the white chocolate in a double boiler. On the same tray where the milk chocolate discs were formed, place a star-shaped mold and pour the melted white chocolate inside. Put the tray in the fridge for 15 minutes to let the chocolate set.

  • Whip the cream until stiff and fold in the hazelnut cream, mixing with a movement from bottom to top. Then transfer the cream into a piping bag with a star nozzle.

  • Remove the molds from the chocolate, very gently to avoid breaking the discs and the star. Take the largest disc and place it on a plate and form a layer of cream. Proceed this way with all the other discs, placing them according to diameter: from largest to smallest. Finish with the cream.

  • Decorate the edges of the tree with caramelized dried fruit, colored balls, and colored stars. Place the white chocolate star on the top of the tree.
