Christmas Almond Brittle

The Christmas Almond Brittle is a dessert made with only three ingredients: toasted almonds, sugar, and candied fruit.

Those who read the title of this dessert are surely wondering what that ‘Christmas’ means: I titled it this way because almond brittle is a typical Christmas dessert, and for the color given by the candied fruits.

This Christmas Almond Brittle is perfect to enjoy during the holidays, to offer to friends and family, and an original idea to put in the Befana stocking (wrapped in aluminum foil and closed like a candy).

Christmas Almond Brittle

Ingredients

  • 7 oz Blanched Almonds
  • 1.1 cups Granulated Sugar
  • 1 package Candied Fruits

Preparation

  • To make the Christmas almond brittle, place the blanched almonds on a baking tray lined with parchment paper. Toast the almonds in a preheated oven at 350°F for 5 minutes, until golden brown.

  • Pour the sugar into a saucepan and let it melt over low heat. When the sugar has turned amber, pour in the almonds and candied fruits into the pan.

  • With the help of a spoon, stir to mix everything well, with an upward motion. Every part of the almond and candied fruit should be coated with caramel.

  • Place the mixture on a work surface previously greased with seed oil, leveling the surface of the mixture well.

  • Let it cool for a few minutes, and before the brittle completely solidifies, cut it into bars of the desired size with a sharp knife. Enjoy!

  • Note: The brittle (once cooled) can be stored wrapped in aluminum foil and placed inside a tin box, or in a jar with a lid, in a cool and dry place.
