Steps
To make the Christmas shortbread cookies, pour the flour into a bowl, add the salt and cold butter cut into pieces. Mix until you get a sandy mixture.
Add the egg yolk, sugar, vanillin (or lemon zest), and mix. It should be a smooth mixture, if at first you see that it doesn’t come together quickly, don’t worry and continue to combine the ingredients. It will result in a very smooth and compact dough. Form a ball, cover it with cling film, and let it rest in the fridge for an hour.
After the resting time, with the help of a rolling pin, soften the shortbread dough and make cookies with the appropriate molds: in the shape of snowmen, balls, Christmas trees, or stars.
Bake in a preheated oven at 350°F for 15 minutes, until golden. Once ready, put them on a rack to cool.
Decorate the cookies with the colored gel food pencils, unleashing your creativity. The cookies will keep for a week, stored in a box or cookie jar.
