Christmas Shortbread Cookies

Ingredients

  • 1 egg yolk
  • 2 cups all-purpose flour
  • 2/3 cup butter
  • 1/2 cup sugar
  • 1 packet vanillin
  • lemon zest
  • 1 pinch salt
  • colored gel food markers
  • to taste colored sprinkles

Steps

  • To make the Christmas shortbread cookies, pour the flour into a bowl, add the salt and cold butter cut into pieces. Knead until you get a sandy mixture.

  • Add the egg yolk, sugar, vanillin (or lemon zest) and knead. It should become a homogeneous mixture; if at first you see it doesn’t mix quickly, don’t be discouraged and continue blending the ingredients. It will be a very smooth and compact dough. Form a ball, cover it with plastic wrap and let it rest in the fridge for an hour.

  • After the resting time, use a rolling pin to soften the shortbread dough and make cookies with the appropriate molds: snowman, balls, and Christmas trees, or star shapes.

  • Bake in a preheated oven at 350°F for 15 minutes, until golden. Once ready, place them on a wire rack to cool.

  • Decorate the cookies with colored gel food markers, letting your creativity flow. The cookies will be good for a week if stored in a box or cookie jar.
