Ingredients
- 1.5 tbsp Sunflower Oil
- 1 egg (small)
- 1/3 cup Powdered Sugar
- 1.5 cups Shredded Coconut
- 1/4 cup Flour
- 1 tsp Baking Powder
- 1/4 cup Coconut Milk (or milk of choice)
- 1 tsp Vanilla Extract
- to taste Candied Cherries

- Air Fryer
- Air Fryer Paper
Preparation
To make the coconut cookies, pour the oil and egg into a bowl, beat with a whisk, and gradually add all other ingredients until you obtain a homogeneous mixture.
Cover with cling film and place the bowl in the refrigerator, let rest for 10 minutes.
Line the bottom of the hot air fryer basket with parchment paper.
Using two teaspoons or a piping bag, scoop the mixture to create small balls or dollops, and place them inside the basket.
Cut the candied cherries and lightly press a piece onto each cookie.
Cook the cookies in the hot air fryer at 356°F for 8/10 minutes, or until golden.
Once cooked, let them cool and cook the remaining cookies. Enjoy!
