The coconut rice with peanut butter chicken is a rich, exotic dish that will win you over!
To make this recipe I cooked the rice with water and coconut milk; for the sauce I cooked the chicken with the vegetables in a pan, then added peanut butter and coconut milk.
Once ready, you’ll serve a dish with a creamy, fragrant sauce.

Ingredients
- 3/4 cup rice
- 3/4 cup coconut milk
- 7 oz chicken
- 1 zucchini
- 1 red bell pepper
- 2 tbsp peanut butter
- to taste onion
- to taste extra virgin olive oil
- to taste salt
Steps
For the coconut rice with peanut butter chicken, wash and clean the vegetables, then cut them into julienne strips.
In a pot add a drizzle of extra virgin olive oil and some chopped onion. Add the vegetables and the chicken cut into bite-sized pieces.
Cook over medium-low heat and stir occasionally, for 5 minutes.
Then add the peanut butter and a glass of coconut milk. Cook until you obtain a creamy mixture.
Cook the rice in boiling, salted water, adding the remaining coconut milk to the water; cook the rice following the instructions on the package. Once ready, drain it.
Serve the coconut rice with peanut butter chicken and enjoy!
