The coconut rice with peanut butter chicken is a rich and exotic dish that will win you over!
To make this recipe, I cooked the rice with water and coconut milk; for the dressing, I sautéed the chicken with vegetables, to which I then added peanut butter and coconut milk.
Once ready, you will serve a creamy and flavorful dish at the table.

Ingredients
- 3/4 cup rice
- 1 cup coconut milk
- 7 oz chicken
- 1 zucchini
- 1 red bell pepper
- 2 tablespoons peanut butter
- to taste onion
- to taste extra virgin olive oil
- to taste salt
Steps
To make coconut rice with peanut butter chicken, wash and clean the vegetables, then cut them into julienne strips.
In a pot, pour a dash of extra virgin olive oil and chopped onion. Add the vegetables and chicken cut into pieces.
Cook over medium-low heat, stirring occasionally, for 5 minutes.
Then add the peanut butter and a glass of coconut milk. Cook until you obtain a creamy mixture.
Cook the rice in boiling salted water, adding the remaining coconut milk to the water; cook the rice following the package instructions. Once ready, drain it.
Serve the coconut rice with peanut butter chicken and enjoy your meal!
