The coconut shrimp is a delicious main course cooked in the hot air fryer. With a crispy and spiced coating, the coconut shrimp is easy to make; they can also be served for an appetizer with friends, accompanied by a sauce of your choice. One leads to another, and everyone will enjoy them!

Ingredients
- 7 oz Shrimp
- 1 egg (medium)
- to taste Flour
- to taste Breadcrumbs
- 2 tbsp Unsweetened Dessicated Coconut
- 2 tsp Curry
- to taste Extra Virgin Olive Oil
- to taste Salt

- Air Fryer Paper Liners
Preparation
Wash the shrimp under running water, remove the head, legs, and shell, then remove the intestinal tract: cut the shrimp’s back with a knife and gently pull it out, trying not to break it.
Dry the shrimp with paper towels.
In a bowl, beat the egg with a pinch of salt. In a plate, pour the flour; in another, pour the breadcrumbs and add the curry and dessicated coconut.
Coat the shrimp one by one, first in flour, then in the egg, and finally in the breadcrumb mixture.
Place the shrimp in the air fryer basket lined with parchment paper.
Drizzle a little extra virgin olive oil and cook at 356°F for 10 minutes or until golden.
Serve the shrimp with a sauce of your choice. Enjoy your meal!
For those who do not have an air fryer, you can fry them or bake them in a preheated oven at 392°F for 15/20 minutes, or until the desired doneness.
