Cookies with Jujubes and Almonds

The cookies with jujubes and almonds are delicious lactose-free cookies, perfect to enjoy at any time of the day.

Jujubes are among my favorite fruits, and those to which I am most attached. I discovered the existence of jujubes in elementary school, thanks to a friend who brought them for recess and let me taste them: I loved them from the first moment!

A few years later, my parents managed to plant a jujube tree in the garden, and that’s how every year I collect a couple of pounds of jujubes. I love to eat these little fruits naturally, but this year I wanted to try using them to make cookies. The result was a great success, and I will make these cookies every time I collect jujubes!

Cookies with Jujubes and Almonds

Ingredients

  • 3/4 cups all-purpose flour
  • 1/3 cup corn flour
  • 1 medium egg
  • 2 tbsp sugar
  • 3 tbsp extra virgin olive oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 5.3 oz jujubes
  • 1/2 cup blanched almonds

Steps

  • To make the cookies with jujubes almonds, in a bowl mix the sugar with the oil; then continue mixing and add the egg and vanilla extract.

  • Add the sifted flours with baking powder, mix until you get a homogeneous mixture.

  • Finally, add the chopped almonds and jujubes pitted and chopped.

  • With your hands, take the dough and form balls the size of a walnut. Slightly flatten them and place them on a baking tray lined with baking paper.

  • Bake in a preheated oven (I use a fan oven) at 350°F for 15-20 minutes, or until they start to brown.

  • Once cooked, remove from the oven and let the cookies cool. Enjoy!
