The couscous with chicken and vegetables is a rich and easy-to-make dish, ideal as a single dish and also for an outdoor lunch. For this recipe, I cooked carrots, peppers, tomatoes, and peas in a pan and then added the diced chicken breast. I obtained a rich and saucy dressing to which I finally added the couscous. Ingredients
- cup uncooked couscous
- cup water
- 5 oz chicken breast
- 1 carrot
- cup peas
- 10 cherry tomatoes
- 1 red pepper (small)
- to taste onion
- to taste extra virgin olive oil
- to taste salt
- 1 tbsp curry (optional)
Steps
To make the couscous with chicken and vegetables, in a pan over low heat, sauté the chopped onion with a drizzle of extra virgin olive oil. You can add curry and/or chili to taste.
Then add the chopped carrot, peas, and the cleaned and sliced pepper. Cook over medium heat for 10 minutes, adding hot water as needed.
Next, add the quartered cherry tomatoes and diced or sliced chicken. Continue cooking, adding more water if necessary. Salt and cook until you get a stew.
In a pot (or bowl), pour the couscous and wet it with the boiling water. Cover with a lid and let it rest for 5 minutes. Then, with the help of a fork, fluff the couscous.
Pour the couscous into the pot with the sauce and mix to combine the ingredients.
Serve, and you can add grated Parmesan cheese if you like. Enjoy your meal!
