Crunchy Parmesan Carrots are a tasty and spiced side dish, also enjoyable as an appetizer with a yogurt sauce.
I seasoned the carrots with oil, curry, garlic, oregano, and parmesan; once cooked, either in the oven or air fryer, you’ll get delicious carrots with a crispy coating.

Ingredients
- 5.3 oz carrots
- 1.1 oz grated Parmesan (+ for the baking sheet)
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp curry
- to taste salt

- Air Fryer Paper Liners
- Baking Tray
Steps
To make crunchy Parmesan carrots, wash and peel the carrots, then cut them into sticks.
In a bowl, pour the oil, a pinch of salt, garlic, oregano, curry, and Parmesan. Mix well to obtain a homogeneous mixture.
Finally, add the carrots and mix to combine the seasoning with the carrots.
Line the oven tray or air fryer basket with parchment paper and sprinkle with grated Parmesan.
Place the carrots and bake in the oven at 392°F for about 20 minutes, until a crust forms.
Or cook them in the air fryer at 392°F for 10 minutes.
