Cupcake with Mascarpone Frosting and Mixed Berries

The cupcake with mascarpone frosting and mixed berries is a soft vanilla treat baked and filled with mixed berry jam. For the decoration of this cupcake, I made a frosting with mascarpone, cream, and sugar, and finally garnished with a teaspoon of jam. This delicately flavored treat is perfect for any time you’re craving something sweet.

Cupcake with Mascarpone Frosting and Mixed Berries

Ingredients

  • 1 1/4 cups All-purpose flour
  • 2 tsp Baking powder
  • 3/4 cup Sugar
  • 3 Egg whites
  • 1 tsp Vanilla extract
  • 6 tbsp Butter
  • 1/3 cup Sour cream*
  • 1/3 cup Milk
  • 2 tbsp Water
  • to taste Mixed berry jam
  • to taste Mixed berry jam
  • 8.8 oz Mascarpone
  • 2/3 cup Heavy whipping cream
  • 1/2 cup Powdered sugar

Instructions

  • *Sour cream: whip one cup of fresh cream, add a teaspoon of lemon juice, and 1/2 teaspoon of salt.

  • To make the cupcake with mascarpone frosting and mixed berries, beat the butter and sugar for about 2-3 minutes until you get a fluffy cream. Add the vanilla extract and sour cream, mix until the ingredients are well combined. Whip the egg whites to stiff peaks and then incorporate them into the mixture a little at a time, using an upward motion.

  • In another bowl, combine the dry ingredients (flour and baking powder), while in another, mix the milk with the water. Add half of the dry ingredients to the butter and egg white mixture created earlier, and mix until the ingredients are well incorporated, always using an upward motion. Add the milk and water mixture and then add the other half of the dry ingredients.

  • Take a cupcake pan with liners and fill them 3/4 full. Bake in the preheated oven at 350°F for about 20 minutes, and do the toothpick test. Once cooked, remove them from the oven and let them cool.

  • Combine the mascarpone with the sugar, then add the whipped cream, using an upward motion. Transfer the cream into a piping bag. Once the cupcakes are cold, make a hole in their center using an apple corer, pressing gently and being careful not to break the treats.

  • Fill the obtained cavity with mixed berry jam. Garnish each cupcake with the mascarpone cream and a teaspoon of jam. Enjoy!
