Earthy almonds are a traditional Apulian sweet recipe made during the Christmas period. They are delicious treats prepared with only two ingredients: toasted almonds and dark chocolate.
I discovered this recipe thanks to my boyfriend who is Apulian, as in every region of Italy there is a different version of earthy almonds: for example, in my region, Abruzzo, earthy almonds are the famous Sassi d’Abruzzo, which have a different preparation and use other ingredients.
Being a sweet tooth, I make these Apulian earthy almonds very often throughout the year, not just at Christmas. They are easy and quick to make and the almond-chocolate combination is truly fabulous!
Earthy almonds are like cherries, you start eating one and end up eating them all. They are perfect to offer to your guests at the end of meals and to accompany coffee or tea.

Ingredients
- 18 oz Almonds
- 9 oz Dark chocolate
Preparation
To make earthy almonds, boil the almonds in a saucepan with plenty of water, then drain and peel them. Dry them and place them on a baking tray lined with parchment paper and toast them in a preheated oven at 400°F until golden brown. Alternatively, place them in the basket of an air fryer and toast them at 400°F for about 10 minutes.
Melt the dark chocolate in a bain-marie and add the almonds. Stir until the almonds are completely covered in chocolate.
With the help of a spoon, place the almonds on a tray lined with parchment paper, well spaced apart. Form mounds of the desired size and continue until all ingredients are used.
Put the earthy almonds in the refrigerator to set for a couple of hours. Enjoy!
