The easter bunny cookies are decorated cookies topped with pistachio spread and colorful confetti candies, perfect for Easter. I made these cookies without butter, using sunflower seed oil instead. Once baked and cooled, I spread pistachio cream on them and arranged colorful confetti candies to give them a bunny shape. These easter bunny cookies are easy and fun to make; you can involve your children to decorate and personalize them!

Ingredients
- 1 1/4 cups all-purpose flour (type 00) (about 150 g)
- 1 egg
- 1/4 cup granulated sugar (about 60 g)
- 4 tbsp sunflower seed oil (about 60 g)
- 1 teaspoon vanilla extract
- to taste pistachio spread
- to taste colored confetti candies
Preparation
To make the easter bunny cookies, in a bowl beat the egg with the sugar, then add the sunflower seed oil and continue beating. Add the vanilla extract and, little by little, the flour.
Knead all the ingredients well until you obtain a soft, homogeneous dough. If at first it seems to take a while to come together, don’t be discouraged and keep mixing the ingredients. Form a ball, cover it with plastic wrap and let it rest for 30 minutes.
After the resting time, take the shortcrust dough and transfer it to a work surface. Using a rolling pin, soften the dough and roll it out.
Using a cookie cutter (I used a square cutter but a round one will work too) cut out the cookies and place them on a baking sheet lined with parchment paper.
Bake the cookies in a preheated oven (I used a convection oven) at 356°F for 15–20 minutes, until golden. Once ready, place them on a rack to cool.
With a teaspoon, spread a little pistachio spread on the surface of each cookie.
Place a whole colored confetti candy on the spread with light pressure. Cut another candy of the same color in half and position the halves above the whole candy to create the bunny’s ears.
