Ingredients
- 4 slices sandwich bread
- 2 eggs
- 8 slices bacon
- 10.5 oz avocado
- lemon juice
- 1 tsp curry
- 2 cherry tomatoes
- to taste extra virgin olive oil
- to taste salt

Preparation
To make the egg-in-a-hole toast, use a heart-shaped cookie cutter to cut out a heart in the center of two slices of bread.
Take a small pan, lightly grease it, and heat it over low flame. Then, toast the two whole slices of bread on both sides.
Next, put the slices of bread with the heart-shaped hole in the pan, cook until golden on one side, then flip them over and crack an egg into each hole. Cook for 4-6 minutes until the egg whites are set and the yolks remain runny.
In a small pan, toast the bacon slices without adding oil until they become crispy.
In a blender, add the avocado flesh, lemon juice, and gradually add the extra virgin olive oil. Blend until you obtain a puree and transfer it to a bowl.
Wash and clean the cherry tomatoes, cut them into small cubes and incorporate them into the avocado. Also add the curry and, if desired, some chopped chili. Finally, salt to taste.
Proceed with assembling the sandwich starting from the bottom: take the whole slice of bread, spread a layer of avocado, then add the bacon and close the sandwich with the slice of bread with the egg heart.
Serve and enjoy your meal!
