The eggs with bacon and guacamole are a rich and tasty appetizer to delight your guests. The hard-boiled eggs are filled with crispy bacon and guacamole made with: avocado, hard-boiled egg yolks, cherry tomatoes, parsley, lime juice, leek, salt, and pepper. These eggs with bacon and guacamole are ideal for special occasions or for Easter lunch; in any case, they will bring color and flavor to the table!

Ingredients
- 6 Eggs
- 1 Avocado
- 1 Lime
- 3 Cherry Tomatoes
- 1 bunch Parsley
- to taste leek
- 4 slices Bacon
- salt and pepper

Preparation
To make the eggs with bacon and guacamole, first boil the eggs. Place the eggs in a saucepan and cover with water, once it reaches a boil, cook for about ten minutes. Once done, drain them and pass under cold water, then peel and let them cool.
Once the eggs have cooled, cut them in half and remove the yolk. In a blender, mix the avocado pulp with the previously removed yolks. Add the juice of half a lime and blend until you get a puree.
Pour the avocado and egg mixture into a bowl and add the chopped parsley. Wash and clean the cherry tomatoes, cut them into small cubes and incorporate them into the guacamole. Also add the chopped leek (adjust the quantity to your taste).
In a pan over low heat, toast the bacon slices. Then crumble it and incorporate it into the guacamole (leaving a little aside for garnish). Salt and pepper the guacamole.
With a spoon, fill the hard-boiled eggs with the guacamole, placing it in the space left by the yolk. Serve the eggs garnished with the crumbled bacon set aside, and if desired, with chopped chili. Enjoy your meal!
