Today I offer you a light and tasty side dish: fennel and carrots, baked or with an air fryer. Easy and quick to make, this side dish of fennel and carrots will be liked by the whole family, as I flavored the vegetables with curry and grated Parmesan cheese. It is also perfect as a seasoning for couscous.

Ingredients
- 7 oz Fennel
- 3.5 oz Carrots
- to taste Onion
- to taste Extra virgin olive oil
- 1 tablespoon Oregano
- 1 tablespoon Parmigiano Reggiano DOP (grated)
- 1 tablespoon Curry (or spices to taste)

- Air fryer
- Air fryer paper
Preparation
To make fennel and carrots, wash and clean the carrots and fennel, then cut them into strips or julienne. Also cut the onion into strips (quantity as desired, according to your taste).
In a bowl, pour the vegetables and a drizzle of extra virgin olive oil. Use a spoon to mix so the oil adheres to the vegetables.
Then season with Parmesan, oregano, and curry (or the spices you prefer).
Pour the vegetables into the air fryer basket lined with parchment paper.
Cook in the air fryer, preferably preheated, at 392°F for 10 minutes.
For those who do not have an air fryer: pour the vegetables into an oven dish. Cook in the already heated oven at 392°F for 15 minutes.
