- 10.5 oz fennel
- 1 cup rice flour
- 1/2 cup water
- 1 sprig oregano
- to taste extra virgin olive oil
- to taste salt
- to taste corn flour

Steps
To make the fennel flatbread, use a mandoline to slice the fennel thinly.
Place the fennel in a bowl, add the rice flour and oregano. Add a drizzle of extra virgin olive oil, salt, pour the water slowly, and mix until you get a homogeneous mixture.
Line a baking pan with parchment paper and grease it. Sprinkle the base with corn flour and pour the fennel mixture.
Use a spoon to spread the mixture evenly on the pan. Sprinkle the surface with more corn flour and drizzle with extra virgin olive oil.
Bake in a preheated oven at 392°F for 20-25 minutes until golden brown.
Once ready, let it cool slightly, then cut. Serve and enjoy your meal!
