Ingredients
- 1.1 lbs potato gnocchi
- 1 cup cherry tomatoes
- 2.5 oz speck
- 1 clove garlic
- to taste basil
- to taste extra virgin olive oil
- to taste salt
Steps
To make the gnocchi with cherry tomatoes and speck, lightly brown the peeled garlic in a pan with a drizzle of extra virgin olive oil.
Then add the speck cut into strips and let it brown for a few minutes.
Wash, clean, and quarter the cherry tomatoes and add them to the pan with the speck. Salt, add the basil leaves (previously cleaned), a glass of cooking water, and let it cook for about 10/15 minutes.
Once the sauce has thickened, remove the garlic.
Cook the gnocchi in boiling salted water and, as soon as they float, drain them and add them to the pan with the sauce. Gently stir them to mix well with the sauce.
Serve and enjoy your meal!
