Gnocchi with sausage ragù is a rich first course with a unique and unmistakable flavor. Gnocchi with ragù is among the classics of Italian cuisine and among the most loved dishes by both adults and children.
Like all traditional recipes, we all rely on the family recipe. The one I propose today is the recipe that my grandmother and mother have always made. The ragù is made with homemade tomato purée, a mixture of onion, celery, and carrots, and minced meat. To enhance the flavor, crumbled sausage is added to the ragù, giving the dish even more taste.
These gnocchi with ragù are delicious and hearty, ideal to serve for Sunday lunch or special occasions.

Ingredients
- 1.1 lbs Potatoes
- 1.6 cups Flour
- 1 Egg
- to taste Salt
- 9 oz minced meat
- 2 sausages
- 21 oz Tomato purée
- 1 onion
- 1 stalk of Celery
- 2 Carrots
- to taste Extra virgin olive oil
- to taste Salt
Preparation
To make the gnocchi, boil the peeled potatoes in salted water, drain them once cooked, and mash them with a potato masher while still hot, letting them fall into a large bowl. Salt the potatoes, then add the egg, flour, and mix until you get a homogeneous and smooth dough.
Then transfer the mixture onto a pastry board or work surface, form small rolls with your hands and cut them into small cylinders, the gnocchi, with a knife.
Wash and trim the carrots and celery, and cut into small cubes. Chop the onion. Peel and crumble the sausages.
In a pan, pour a drizzle of extra virgin olive oil, heat it up, and then add the chopped onion, carrots, and celery.
Let them soften for 10 minutes over low heat then add the minced meat and sausages, and let them brown.
Finally, add the tomato purée, and add water until the sauce is completely covered. Cook over medium heat, stirring occasionally. Salt at the end of cooking.
Cook the gnocchi in boiling salted water and, as soon as they rise to the surface, drain them and pour them into the pan with the ragù. Stir gently to mix well with the sauce.
Serve hot with a sprinkle of grated cheese. Enjoy your meal!
