The gratinated artichokes are crunchy and tasty bites to serve at the table as an appetizer or side dish. These artichokes are easy and quick to make: I boiled the artichokes, then dipped them in oil and breadcrumbs, and finally, I cooked them. You can cook the gratinated artichokes in the oven or in the hot air fryer. You’ll get succulent and crunchy artichokes that will win everyone over!

Recipes with artichokes
- Difficulty: Very easy
- Cost: Economical
- Preparation time: 5 Minutes
- Portions: 2 People
- Cooking methods: Oven, Air frying
Ingredients
- 4 small artichokes
- 4 tablespoons breadcrumbs
- 1 tablespoon grated Parmesan cheese
- 1 sprig dried oregano
- to taste extra virgin olive oil
- to taste salt
Steps
To make the gratinated artichokes, wash and clean the artichokes: remove the stem (if you prefer, you can leave it) and remove the outer leaves, the hardest ones.
Cook the artichokes in salted boiling water for 3 minutes. Once the artichokes are cooked, use a slotted spoon to drain them and place them between two sheets of paper towels. Let the artichokes dry and cool slightly.
Pour some extra virgin olive oil into a small bowl. Pour the breadcrumbs (coarsely ground) onto a plate, add the grated Parmesan cheese and oregano.
Dip each half of the artichoke first in the oil and then in the breadcrumbs.
Place the artichokes in the air fryer basket lined with parchment paper and slightly greased. Cook at 392°F (200°C) for 10-15 minutes, until golden brown.
For those who don’t have a hot air fryer. Place the artichokes on the oven tray with slightly greased parchment paper. Cook in the oven (I use a fan setting) preheated to 392°F (200°C) for 20 minutes, or until golden brown.
