Hasselback potatoes are a delicious idea to serve at the table as an appetizer or side dish. The uniqueness of these potatoes is that they are cut ‘accordion-style’ and enriched with a mix of oil, herbs, and cheese; I cooked them in the air fryer, but alternatively, you can bake them in the oven. These Hasselback potatoes, crispy on the outside and soft on the inside, are easy to make and will impress your guests!

Ingredients
- 3 potatoes
- 1 teaspoon chopped parsley
- 1 teaspoon dried oregano
- 1 teaspoon grated pecorino cheese
- 1 teaspoon paprika
- 1.5 tablespoons extra virgin olive oil
Tools
- Skewers
- 1 Air Fryer
- 1 Knife
Steps
To make the Hasselback potatoes, wash the potatoes thoroughly under running water and dry them (the skin should not be removed). Remove any imperfections.
Insert a skewer into the bottom of each potato, 0.4 inches from the base. Use a knife to make thin slices in the potatoes.
In a small bowl, combine the extra virgin olive oil, parsley, oregano, paprika, and grated pecorino cheese. Stir with a teaspoon.
Brush the surface of the potatoes with the flavored oil.
For those with an air fryer. Place the potatoes in the air fryer basket. Cook at 392°F for 30 minutes.
Or bake them in the preheated oven (I used a convection oven) at 356°F for 50 minutes.
Once cooked and well browned, take the potatoes out of the oven and let them cool slightly. Serve and enjoy your meal!
