Hasselback Potatoes with Pork Jowl and Cheese

Hasselback potatoes with pork jowl and cheese are a tasty idea to present at the table as an appetizer or as an alternative main course. Hasselback potatoes are named after the Swedish chef of the “Hasselback” restaurant, who invented the accordion-shaped potato preparation. The original recipe involves cooking the potatoes with butter and a mix of aromatic herbs; I made the hasselback potatoes with crispy pork jowl, cheddar cheese, and then garnished them with grated parmesan and chives. The result was amazing! These hasselback potatoes with pork jowl and cheese have an alluring aroma and a bold flavor that will amaze and win everyone over at the table!

Hasselback Potatoes with Pork Jowl and Cheese

Ingredients

  • 3 potatoes
  • 3 slices pork jowl
  • 1 cheddar slice
  • 1 tablespoon grated parmesan
  • to taste chives

Steps

  • To make Hasselback potatoes with pork jowl and cheese, wash the potatoes thoroughly under running water and dry them (do not remove the skin). On the bottom of each potato, cut and remove a thin slice lengthwise, this will allow the potatoes to have a flat base.

  • Place the potatoes with the cut side down on a baking tray lined with parchment paper and bake in a preheated oven (I used a fan oven) at 430°F for 15-20 minutes, the potatoes should be slightly soft.

  • Meanwhile, cut the pork jowl slices into strips. In a pan, roast the pork jowl, without adding extra virgin olive oil, until they become crispy. Cut the cheddar slice into cubes.

  • Then remove from the oven and score each potato with a knife, cutting thin slices and being careful not to cut all the way through, leaving 0.4 inches from the base.

  • Fill the inside of the potato slices with the pork jowl and cheddar. Sprinkle the surface of each potato with grated parmesan and chives.

  • Bake the potatoes in the preheated oven at 390°F for about 20 minutes. Once cooked and well browned, remove the potatoes and let them cool slightly. Serve and enjoy your meal!
