Homemade muesli is ideal for breakfast or a mid-day snack. Muesli is healthy, nutritious, and very tasty, and it can be customized to your taste and imagination.
Muesli is a crunchy mix based on oatmeal, cereals, and dried fruits; the crunchiness is achieved by mixing with water and honey and then baking it.
The recipe I propose today is my personal creation, I don’t use sugar, and I use: oatmeal, puffed rice, puffed spelt, almonds, walnuts, then I add dried cranberries and raisins. Also, to flavor everything, I added some grated orange zest, nutmeg, and cinnamon. As always, for successful results, I recommend using quality products.

Preparation
To make homemade muesli, pour the oat flakes, puffed rice, and puffed spelt into a large bowl. Then add the almonds (you can use almonds with or without skin) and coarsely chopped walnut kernels.
In a saucepan, pour the water and add the honey. Place over low heat and melt the honey, the mixture should not boil.
Pour the water and honey mixture over the oats and cereals. Stir with a spoon to combine the ingredients, until you get a moist and homogeneous mixture.
Spread everything onto a baking tray lined with parchment paper. Level well with a spoon and place in a preheated oven at 300°F for 40/45 minutes until golden brown. Stir the muesli with a spoon every 15 minutes to obtain an evenly crunchy muesli that isn’t soft underneath.
When the muesli is ready, remove from the oven and let it cool. Then add the cranberries, raisins, spices, and grated peel of an orange. Stir with a spoon to flavor the muesli.
Pour the muesli into an airtight glass jar (1.5 liters) and enjoy when needed!
