Homemade muesli is ideal for breakfast or a mid-day snack. Muesli is healthy, nutritious, and very tasty, and it can be customized to your own taste and imagination. Muesli is a crunchy mix based on oat flakes, cereals, and dried fruits; the crunchiness comes from the mixture of water and honey, then baked. The recipe I propose today is my personal creation, I don’t use sugar and I use: oat flakes, puffed rice, puffed spelt, almonds, walnuts, then I add dried cranberries and raisins. Additionally, for flavoring, I have added grated orange zest, nutmeg, and cinnamon. As always, for the best result of the recipe, it is recommended to use quality products.

Preparation
To make homemade muesli, pour the oat flakes, puffed rice, and puffed spelt into a large bowl. Then add the almonds (you can use almonds with or without skin) and roughly chopped walnuts.
In a small pot, pour the water and add the honey. Heat over low heat and melt the honey; the mixture should not boil.
Pour the water and honey mixture into the bowl over the oat flakes and cereals. Mix with a spoon to combine the ingredients until a moist and homogeneous mixture is obtained.
Pour everything onto a baking tray lined with parchment paper. Level well with a spoon and place in a fan oven at 300°F for 40/45 minutes until golden. Every 15 minutes, stir the muesli with a spoon to get an evenly crunchy muesli and avoid it being soft underneath.
When the muesli is ready, remove it from the oven and let it cool. Then add the cranberries, raisins, spices, and grated orange peel. Stir with a spoon to flavor the muesli.
Pour the muesli into a glass jar with a hermetic seal and consume as needed. Enjoy!
