Homemade Tomato Powder

Homemade tomato powder is made using the peels obtained by squeezing tomatoes when making homemade tomato bottles (homemade tomato sauce). When making sauces and preserves at home, the tomatoes are passed through the appropriate machine to separate the tomato juice from the seeds and peels; the peels are squeezed multiple times since the tomato juice is right there. Every summer when I make homemade tomato preserves, I set aside the peels; after they have been squeezed multiple times, I dry them out and make this recipe.

Tomato powder is ideal to use as a spice, to flavor dishes such as soups and stews, or for pasta dishes or on pizza; but also to season roasted potatoes, meat, and fish. You can store the powder in a small glass jar and use it whenever you want; once made, it will fill your kitchen with an irresistible aroma!

Tomato Powder
  • Difficulty: Easy

Ingredients

  • 3.5 oz dried tomato peels
  • 1 tablespoon garlic powder
  • 2 tablespoons dried oregano

Tools

  • Dehydrator
  • Chopper
  • Jar

Preparation

  • To make the tomato powder, dry the tomato peels in the sun, or in a dehydrator for about 4 hours, or in the oven at 175°F for 3 hours, turning them often.

    Alternatively:
    in the microwave at 2-minute intervals at 750 watts.
    In an air fryer at 104°F, checking every 20 minutes.

  • Once the peels are dried, pour them into the bowl of the mixer and blend until you get a powder.

  • Then add garlic powder and oregano, blend again. The amount of garlic can vary according to your taste.

  • Pass the powder through a fine sieve to remove the seeds, and collect the powder in a bowl.

  • Transfer the tomato powder to a glass jar with a lid. Enjoy!
