Lemon Cookies

The lemon cookies are delightful and aromatic treats. Easy and quick to make, these cookies stand out for their irresistible taste and their sugar glaze (granulated and powdered) which creates cracks on their surface during baking. Lemon cookies are perfect to enjoy at any time of day, but beware: they are addictive; once you’ve tasted one, it’s hard to stop!

Lemon Cookies
  • Difficulty: Easy

Ingredients

  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 2 tbsp Sugar
  • 1/3 cup Sunflower oil
  • 1 egg (small)
  • Lemon juice
  • Lemon zest
  • as needed Granulated sugar
  • as needed Powdered sugar

Preparation

  • To make the lemon cookies, in a bowl mix the sugar with the sunflower oil; then, continuing to mix, add the egg, lemon juice, and grated lemon zest.

  • Add the sifted flour and baking powder, mix until you get a homogeneous mixture. With your hands, take the dough and form balls, the size of a walnut.

  • On a small plate, pour some granulated sugar, and on another, a little powdered sugar. Roll the previously made balls first in the granulated sugar, and then in the powdered sugar, coating them well.

  • Transfer the cookies to a baking sheet lined with parchment paper, bake in the oven (I use a fan oven) preheated to 350°F for about 10 minutes, or until they start to turn golden.

  • Once baked, remove from the oven and let the cookies cool. Enjoy!
