Mashed potatoes are delicious and crispy potatoes baked in the oven, perfect to serve at the table as a side dish or appetizer. For this recipe, I used new potatoes, but you can use other types of potatoes as well. First, I boiled them and then baked them in the oven, flavored them with rosemary and oregano, seasoned with oil and pecorino, and added some paprika. Once cooked, you’ll get crispy potatoes with an irresistible aroma!

Ingredients
- 10 new potatoes
- 1 sprig dried oregano
- 1 sprig rosemary
- 1 tablespoon grated pecorino
- 1 tablespoon paprika
- to taste extra virgin olive oil
- to taste salt
Preparation
To make the mashed potatoes, wash and clean the potatoes, then boil them in plenty of boiling water. To check if the potatoes are cooked, insert a fork into them, it should penetrate easily.
Once cooked, drain the potatoes and place them, spaced apart, on a baking sheet lined with parchment paper.
Mash the potatoes with a meat tenderizer or the bottom of a glass.
Drizzle the potatoes with extra virgin olive oil, a pinch of salt, a sprinkle of rosemary, oregano, paprika, and pecorino.
Bake the potatoes in a preheated oven at 430°F for 30 minutes, or until golden brown. Enjoy!
