Muffins with Egg Whites and Greek Yogurt

The muffins with egg whites and Greek yogurt are soft treats without butter and cooked in an air fryer, ideal for breakfast or a snack for the whole family.

Making these muffins is quick and easy: just beat the egg whites until stiff and incorporate the rest of the ingredients. I enriched the muffins by adding chocolate chips.

Muffins with Egg Whites and Greek Yogurt

Ingredients

  • 3.5 oz egg whites
  • 5 oz Greek yogurt
  • 3.5 oz all-purpose flour (or oat flour)
  • 1/4 cup sugar
  • 2 tbsp sunflower oil (or half a tablespoon of coconut oil)
  • Half packet baking powder
  • 1 tsp vanilla extract
  • 2 tbsp chocolate chips

Tools

  • Mixer
  • Cupcake Liners
  • Air Fryer
  • Spatula

Steps

  • To make the muffins with egg whites and Greek yogurt, beat the egg whites until stiff.

  • In a bowl, pour the Greek yogurt and add the sugar. Mix and also add the oil and vanilla extract.

  • Then add the sifted flour with the baking powder, mix to obtain a smooth, lump-free batter.

  • Incorporate the egg whites, using a spatula, folding from bottom to top.

  • Finally, add the chocolate chips, again folding from bottom to top.

  • Pour the batter into the cupcake liners, filling them about 3/4 full.

  • Cook the muffins in a hot air fryer at 320°F for about 12 minutes, or until golden brown and a toothpick test comes out clean.

  • Allow them to cool before enjoying. Enjoy!
