Nerano Pizza is a delightful leavened version of the Spaghetti alla Nerano recipe.
In this recipe, four undisputed protagonists stand out: the zucchini (which must be fresh), thinly sliced and fried in extra virgin olive oil; the mozzarella, and particularly the Provolone del Monaco, which will give flavor to the pizza. And of course, the pizza dough, which will host a topping with a unique taste!

Ingredients
- 10.6 oz all-purpose flour
- 3/4 cup water
- 1 tsp fresh yeast
- 1 tbsp extra virgin olive oil
- 3/4 tsp salt
- 3 zucchini
- 5.3 oz mozzarella
- 1.06 oz Provolone del Monaco
- to taste basil
- to taste salt
- to taste oil for cooking

Steps
To make the Nerano Pizza, crumble the fresh yeast into a small bowl and add room temperature water. Stir until the yeast is completely dissolved.
In a large bowl, or in a stand mixer, pour the flour and add the yeast and water mixture. Start kneading.
Also add the salt and extra virgin olive oil; knead until the mixture takes shape: it should be a compact and soft mass that does not stick to hands or the bowl.
Cover the bowl with plastic wrap and let the dough rise for four hours, until it doubles in volume.
After the rising time, take the dough and divide it into three equal parts and place them inside three round baking pans.
Spread the pizzas with your hands and let them rise for another 3/4 hours, away from drafts, preferably in the turned-off oven.
Wash and trim the zucchini, slice them into thin rounds. Then fry them in plenty of hot extra virgin olive oil.
Once the zucchini are golden, drain them and place them on absorbent paper. Then salt them and add some hand-torn basil leaves.
Bake the pizzas in a preheated oven at 428°F (220°C) for 10 minutes. Remove the pizzas from the oven, add the chopped mozzarella and chopped provolone (keeping some aside for finishing). Put the pizzas back in the oven for 5 minutes, or until the desired doneness.
Once the pizzas are cooked, garnish with the zucchini and some chopped provolone. Enjoy your meal!
