The nest cupcake is a soft cocoa little cake filled with a milk chocolate egg and decorated to look like a nest with eggs. For this recipe I made cocoa cupcakes, placed a chocolate egg in the center of each one and baked them in the oven. For the decoration I garnished with whipped cream mixed with hazelnut spread, chocolate sprinkles and colored candy eggs. Perfect for Easter or spring days — these cupcakes will delight young and old!

Ingredients
- 3/4 cup + 1 tbsp all-purpose flour (farina 00)
- 2 eggs
- 6 tbsp + 1 tsp granulated sugar
- 1 teaspoon vanilla extract
- 1/3 cup cup sunflower seed oil
- 1 packet baking powder (for cakes)
- 1/2 cup cup unsweetened cocoa powder
- 8 milk chocolate eggs
- 3.4 fl oz heavy whipping cream
- 1 tablespoon hazelnut spread
- to taste chocolate sprinkles
- 16 colored candy eggs

Steps
To make the nest cupcakes, beat the eggs with the sugar until you obtain a creamy mixture. Add the vanilla extract and sunflower seed oil, mixing well to combine the ingredients.
Add the flour and baking powder, mixing until you obtain a smooth, homogeneous batter. Finally add the unsweetened cocoa powder and mix until the batter is smooth and glossy.
Take a cupcake pan with liners and fill them up to three quarters. Place a milk chocolate egg in the center of each cupcake.
Bake in the oven at 356°F for 15 minutes. Once baked, leave them in the turned-off oven for 5 minutes with the door ajar. Then remove them from the oven and let them cool.
Whip the cream until stiff and fold in the hazelnut spread using a spatula with a gentle upward motion.
Transfer the cream into a piping bag fitted with a star tip, fill the cavity of the cupcakes and pipe leaving a hole in the center so as to create a nest shape.
Turn the cupcakes upside down into the chocolate sprinkles and decorate the center with two colored candy eggs. Enjoy!
